Paleo/Pegan-Friendly Gluten + Dairy-Free Pancakes
Breakfast has been hard ever since becoming Pegan. Noticing that gluten was causing issues for me pretty much eliminated most sorts of breakfast I had previously enjoyed. Today we're creating delicious pancakes that are suitable for a variety of dietary requirements. I remember when I was younger, I never quite enjoyed pancake variants such as buckwheat as it was never quite the same as regular pancakes. It always felt like something was missing. What's great about this recipe is that they're equally (if not more) as delicious as regular pancakes but won't leave you with an upset stomach.
My friend Isobel had recommended a similar recipe a few months ago as her go-to breakfast, but I had never come around to making them myself. Recently I noticed my mother in the kitchen in the morning for a few days brainstorming at trying to create this recipe, and I think it hit gold.
It's super quick and simple to make and is perfect for when you're turning to something sweeter in the morning for breakfast.
Makes four servings
Ready in 25 minutes
Ingredients:
1 cup organic tapioca flour
1 cup organic almond meal
3 organic eggs, separated
1/2 teaspoon bicarb soda
A pinch of salt
2 teaspoons organic apple cider vinegar
1/2 cup organic nut milk of choice
1/2 cup mineral water
2 tablespoon coconut or macadamia oil for frying
Optional: Organic berries and maple syrup to put on top.
Directions:
Separate the eggs and whisk the egg whites in a separate bowl until stiff peaks arise.
In a separate bowl, add all dry ingredients and mix, then add the egg yolks.
Slowly add the mineral water and oat milk, making sure it doesn't become too liquidy for pancake mix. The milk and mineral water should be equal parts.
When at a correct consistency, fold the fluffed egg whites into the mix.
On a hot fry pan, add 2 tablespoons of macadamia or coconut oil to melt.
Spoon 4 tablespoons of pancake mix onto the hot frypan and allow to cook for around a minute and a half. Then flip the pancake so both sides are cooked well.
Add whatever topping you prefer, I like them with berries and maple syrup.
